Enjoy the satisfying crunch and the warm cinnamon sugar coating without compromising your ketogenic goals.

INGREDIENTS

  • 1 1/2 cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 egg, beaten
  • 3 tbsp melted coconut oil
  • 1 tsp melted butter
  • 1/2 cup Lakanto monk fruit sweetener (or your preferred sweetener)
  • 2 tbsp ground cinnamon

DIRECTIONS

  • Preheat the oven: Preheat your oven to 350°F. Line a medium or large baking sheet with parchment paper to make cleanup easier.
  • Prepare the cheese mixture: In a microwave-safe bowl, microwave the mozzarella and cream cheese together for 1 minute, stirring halfway through to ensure it’s completely melted and smooth.
  • Combine the flour and egg: Add the almond flour, coconut flour, and beaten egg to the melted cheese mixture. Stir well to create a uniform, sticky dough.
  • Shape the pretzels: Divide the dough into five equal portions. Roll each portion into a pretzel shape and place them on your prepared baking sheet. If the dough is sticky, slightly dampen your hands.
  • Bake the pretzels: Bake the pretzels for about 15 minutes, or until they are golden brown. Watch for a golden hue—this is your signal that they’re ready!
  • Prepare the cinnamon-sugar coating: In a small bowl, melt the coconut oil and butter in the microwave. In another dish, whisk together the sweetener and cinnamon.
  • Coat the pretzels: Once the pretzels are baked, brush each one with the melted coconut oil and butter mixture. Then, roll them in the cinnamon-sugar mixture for a sweet and flavorful coating.

NOTES

Essential Tools:

  • Baking Sheet: Use a large baking sheet lined with parchment paper for easy cleanup and to prevent sticking.
  • Microwave-Safe Bowl: A glass or ceramic bowl works best for melting the cheese and cream cheese.
  • Wooden Spoon or Silicone Spatula: These are ideal for mixing the flour into the melted cheese without damaging the bowl.
  • Mixing Bowls: You’ll need separate bowls for the cinnamon-sugar mixture and to melt the butter and coconut oil.
  • Pastry Brush: This helps apply the coconut oil and butter mixture evenly over the pretzels.
  • Cooling Rack: Once baked, transfer your pretzels to a cooling rack to cool evenly and avoid sogginess from residual heat.
