EASY WEEKNIGHT DINNER: CHICKEN DIVAN

INGREDIENTS

  • 4 chicken breasts, cooked and shredded
  • 2–3 heads of broccoli
  • 2 cans of cream of chicken soup
  • 1 ½ cups mayonnaise
  • ⅓ cup sour cream
  • ⅓ cup chicken broth
  • 2 teaspoons lemon juice
  • ¼ teaspoon curry powder (or up to 2 teaspoons, to taste)
  • 2 cups shredded cheddar cheese
  • Bread crumbs or crushed Ritz crackers
  • Cooked rice, for serving

INSTRUCTIONS

  • Prep the Broccoli: Cut the broccoli into florets and steam for 2–3 minutes until just tender. Arrange the steamed broccoli evenly in the bottom of a 9×13 pan.
  • Mix the Filling: In a large bowl, combine the cream of chicken soup, mayonnaise, sour cream, chicken broth, lemon juice, curry powder, shredded cheese, and cooked chicken. Stir until well mixed.
  • Assemble the Dish: Pour the chicken mixture over the broccoli. Sprinkle with bread crumbs or crushed Ritz crackers for a crispy topping.
