INGREDIENTS
- 4 chicken breasts, cooked and shredded
- 2–3 heads of broccoli
- 2 cans of cream of chicken soup
- 1 ½ cups mayonnaise
- ⅓ cup sour cream
- ⅓ cup chicken broth
- 2 teaspoons lemon juice
- ¼ teaspoon curry powder (or up to 2 teaspoons, to taste)
- 2 cups shredded cheddar cheese
- Bread crumbs or crushed Ritz crackers
- Cooked rice, for serving
INSTRUCTIONS
- Prep the Broccoli: Cut the broccoli into florets and steam for 2–3 minutes until just tender. Arrange the steamed broccoli evenly in the bottom of a 9×13 pan.
- Mix the Filling: In a large bowl, combine the cream of chicken soup, mayonnaise, sour cream, chicken broth, lemon juice, curry powder, shredded cheese, and cooked chicken. Stir until well mixed.
- Assemble the Dish: Pour the chicken mixture over the broccoli. Sprinkle with bread crumbs or crushed Ritz crackers for a crispy topping.
