Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons honey
  • Fresh berries, for garnish
  • Additional honey, for drizzling

Instructions

  • In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  • In a separate bowl, whisk the egg until frothy. Add the milk and honey, whisking until fully combined.
  • Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Don’t overmix; a few lumps are fine.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  • Transfer the pancakes to a warm plate, stacking them to create a fluffy tower.
  • Garnish with fresh berries and drizzle with honey.
  • Serve with warm maple syrup or extra honey on the side.
