CHEESY PINEAPPLE CASSEROLE

This delightful pineapple casserole is a must-have for your next potluck or holiday gathering! Perfectly paired with holiday ham, it’s not only irresistibly delicious but also incredibly easy to prepare. The only question is: will you serve it as a side dish or a dessert?

INGREDIENTS

  • 40 ounces pineapple chunks (2 cans, 20 oz each, well-drained – reserve ⅓ cup of the juice)
  • 1 cup sugar
  • 5 tablespoons flour
  • ¼ teaspoon salt
  • 1 cup sharp cheddar cheese (shredded)
  • ¼ cup butter (melted)
  • 1 sleeve Ritz crackers (coarsely crushed, about 30 crackers)

INSTRUCTIONS

  • Preheat oven to 350°F. Butter an 8×8-inch baking dish and set aside.
  • Drain the pineapple chunks thoroughly. Use a sieve to remove excess liquid and blot dry. Reserve ⅓ cup of the juice. Transfer the pineapple chunks to a large bowl.
  • In a medium bowl, mix together sugar, flour, salt, and the reserved pineapple juice. Add the pineapple chunks and toss until well coated.
  • Spoon the pineapple mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  • In a small bowl, combine the crushed Ritz crackers with the melted butter. Spread the buttery cracker crumbs evenly over the pineapple and cheese layer.
  • Bake for 30 minutes, or until the casserole is golden brown, hot, and bubbly.
