This Indian-Spiced Cauliflower Rice is a quick, easy, and nutritious alternative to traditional rice. Inspired by Get the Glow by Madeleine Shaw, this flavorful dish is packed with warm spices and wholesome ingredients.
INGREDIENTS
- 1 cauliflower, leaves and stalk removed
- 1 tablespoon olive oil (or coconut oil, or canola oil)
- 1 teaspoon cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons fresh coriander (cilantro), chopped

INSTRUCTIONS
- Finely chop the cauliflower, or use a food processor to pulse it into rice-like pieces. You can also grate it using the large holes on a cheese grater.
- Heat the oil in a frying pan over low heat for about 30 seconds. Add the spices and sauté for another 30 seconds until fragrant.
- Stir in the cauliflower and cook over medium heat for 3-5 minutes, stirring occasionally, until it reaches your desired texture. For a slight crunch, cook for less time.
- Season with salt and pepper, then mix in the fresh coriander.
- Serve warm with your favorite curry or as a flavorful side dish.
NOTES
- Best enjoyed fresh; not suitable for freezing.
