INDIAN SPICED CAULIFLOWER RICE (VEGAN)

This Indian-Spiced Cauliflower Rice is a quick, easy, and nutritious alternative to traditional rice. Inspired by Get the Glow by Madeleine Shaw, this flavorful dish is packed with warm spices and wholesome ingredients.

INGREDIENTS

  • 1 cauliflower, leaves and stalk removed
  • 1 tablespoon olive oil (or coconut oil, or canola oil)
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons fresh coriander (cilantro), chopped

INSTRUCTIONS

  • Finely chop the cauliflower, or use a food processor to pulse it into rice-like pieces. You can also grate it using the large holes on a cheese grater.
  • Heat the oil in a frying pan over low heat for about 30 seconds. Add the spices and sauté for another 30 seconds until fragrant.
  • Stir in the cauliflower and cook over medium heat for 3-5 minutes, stirring occasionally, until it reaches your desired texture. For a slight crunch, cook for less time.
  • Season with salt and pepper, then mix in the fresh coriander.
  • Serve warm with your favorite curry or as a flavorful side dish.

NOTES

  • Best enjoyed fresh; not suitable for freezing.
