ORANGE ROUGHY WITH DILL SAUCE

Ingredients

  • 5–7 orange roughy fillets
  • 1/2 cup low-fat mayonnaise
  • 2 teaspoons lemon juice
  • 2 teaspoons lime juice
  • 2 teaspoons Dijon mustard
  • 2–3 tablespoons fresh dill, chopped
  • 2 tablespoons grated Parmesan cheese

Directions

  • Preheat the oven to 375°F. Lightly spray a baking dish with cooking spray.
  • Arrange the fish fillets in the dish.
  • In a bowl, combine the mayonnaise, lemon juice, lime juice, and Dijon mustard.
  • Stir in the chopped dill and mix well.
  • Spread the sauce evenly over the fish fillets.
  • Sprinkle grated Parmesan cheese over the top of the fillets.
  • Bake for 20 minutes or until the fish is cooked through, then switch to broil for the last 5 minutes to crisp and brown the top.
