PIZZA MUFFINS (ANY FLAVOUR)

Ready in just 15 minutes, these simple pizza muffins are the ultimate solution for a quick snack, on-the-go lunch, or effortless dinner. Halved English muffins are toasted, topped with melted cheese, and loaded with your favorite pizza toppings. Perfectly customizable, these single-serve pizzas can be tailored to suit any taste or dietary preference, making them a hit with everyone!

INGREDIENTS

  • 6 English muffins (white or wholemeal), halved to make 12 pieces
  • ¾ cup pizza sauce (homemade or store-bought)
  • 2 cups shredded mozzarella or pizza cheese blend
  • 1 cup additional shredded toppings of your choice (optional):
    • Shredded ham
    • Sliced cherry tomatoes
    • Mushrooms
    • Thinly sliced capsicum
    • Pepperoni

INSTRUCTIONS

For Conventional Oven

  • Preheat the oven to 180°C (356°F) and line a baking tray or pizza tray with baking paper.
  • Lightly toast the muffin halves in a toaster or under a grill until golden and slightly crisp. Avoid over-toasting, as they will finish cooking in the oven.
  • Place the toasted muffin halves, cut-side up, on the prepared tray.
  • Spread 1-2 teaspoons of pizza sauce onto each muffin, covering the surface.
  • Top with shredded cheese and your chosen toppings.
  • Bake for 10 minutes or until the edges are golden, the cheese is melted, and the toppings are cooked.
  • Transfer to a wire rack to cool slightly, or serve hot. Enjoy!

For Air Fryer

  • Arrange muffin halves, cut-side up, in a single layer in the air fryer basket. Cook at 180°C (356°F) for 3 minutes. If necessary, work in batches.
  • Spread 1-2 teaspoons of pizza sauce on each toasted muffin.
  • Add shredded cheese and your preferred toppings.
  • Cook for 4-6 minutes (in batches if needed) until the cheese is melted, the crust is crisp, and the toppings are cooked.
  • Transfer to a wire rack to cool slightly, or serve hot. Enjoy!

NOTES

  • Avoid soggy muffins: Lightly toast the English muffins before adding sauce and toppings.
  • Don’t over-toast: Muffins will crisp further during baking or air frying.
  • Keep it simple: Stick to 2-3 finely chopped toppings to ensure they cook evenly.

STORAGE AND FREEZING

  • Storage: Store cooled muffins in an airtight container in the fridge for up to 3-4 days.
  • Freezing: Let the muffins cool completely before freezing. Place them in an airtight container, layering with baking paper, or use a freezer bag.
    • To reheat: Thaw overnight in the fridge or at room temperature. Heat in an oven or air fryer at 180°C (356°F) for 5-10 minutes. If reheating from frozen, add 3-4 extra minutes.
