Ingredients
- 12 extra large eggs
- 1 1/2 cups white vinegar
- 1 1/2 cups water
- 2 tablespoons pickling spice
- 1 cayenne or habanero pepper
- 1 clove garlic (we use at least 5 cloves per jar for extra flavor)
- 1 bay leaf
Instructions
- Place eggs in a small saucepan and cover them with cold water. Bring the water to a boil, then remove the pan from the heat. Cover and let the eggs sit in the hot water for 10 to 12 minutes.
- After the eggs have cooked, remove them from the hot water, cool them down, and peel.
- In a medium saucepan over medium heat, combine the vinegar, water, and pickling spice. Bring the mixture to a boil, then add the garlic and bay leaf. Remove from heat.
- Fill a clean quart mason jar with boiling water to warm it up. Once the jar is ready, discard the water.
- Place the peeled eggs into the jar and pour the hot pickling liquid over them. Seal the jar and refrigerate for 8 to 10 days before serving.
