INGREDIENTS
- 1 lb chicken tenderloins
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 3/4 cup buttermilk
- 1 large egg
- 2 tsp hot sauce
- Oil for frying
INSTRUCTIONS
- In a medium bowl, combine flour, baking powder, salt, pepper, and garlic powder. Mix well and set aside. In another bowl, whisk together buttermilk, egg, and hot sauce until fully combined.
- Heat about 3 inches of oil in a deep skillet or Dutch oven over medium-low heat, bringing it to around 325°F.
- While the oil heats, dredge each chicken tender in the flour mixture, coating well and shaking off any excess. Dip the coated tender into the buttermilk mixture, allowing excess to drip off, then return it to the flour mixture and coat again, pressing the flour to form a good crust.
- Once the oil is ready, carefully fry the tenders in batches, avoiding overcrowding. Cook each side for 3-5 minutes, or until golden brown, crispy, and the internal temperature reaches 165°F.
- Place cooked tenders on a wire rack while frying the remaining pieces.
