EASY CHICKEN FRIED RICE

Whip up this Easy Chicken Fried Rice for a quick weeknight meal that delivers all the flavors of authentic Chinese takeout. Tender chicken, eggs, and vegetables are sautéed in a healthy oil, then fried with rice and a savory Asian sauce until crispy perfection. Whether it’s a solo lunch or a family dinner, this dish is your go-to for a delicious homemade takeout experience!

INGREDIENTS (ADJUST AS NEEDED)

  • ½ cup carrots, finely diced
  • 1 cup bell pepper, cut into ½-inch pieces
  • 1 cup sweet onion, cut into ½-inch pieces
  • 4 Tbsp olive or avocado oil, divided
  • 1 lb chicken thighs or breasts, cut into ½-inch cubes
  • 4 eggs, whisked
  • ½ tsp pepper
  • ½ tsp salt (adjust to taste)
  • 4 cups cooked rice*
  • 4 Tbsp soy sauce (gluten-free or Tamari)
  • 2 Tbsp rice wine vinegar
  • 1 tsp toasted sesame oil
  • ½ cup frozen peas
  • Green onions (optional, for garnish)

INSTRUCTIONS

  • Sauté the Vegetables: In a large wok or skillet, heat 2 tablespoons of oil over medium heat. Add the bell peppers, onions, and carrots. Sauté for 3-5 minutes until tender.
  • Cook the Chicken: Push the vegetables to the side and add 1 tablespoon of oil to the pan. Place the chicken in the oil and cook for 3-5 minutes, or until fully cooked. Mix the chicken with the vegetables.
  • Scramble the Eggs: In a small bowl, whisk the eggs. Move the chicken and vegetables to one side of the pan, or transfer them to a plate. Drizzle 1-2 tablespoons of oil into the empty side of the pan, and add the eggs, salt, and pepper. Scramble for 2-3 minutes, until fully cooked. Once done, combine the eggs with the vegetable and chicken mixture.
  • Fry the Rice: Add the cooked rice, soy sauce, rice vinegar, and sesame oil to the pan. Stir to combine and cook over medium heat for about 10 minutes. If you prefer extra crispy rice, let it sit for a minute or so over medium to medium-high heat before mixing again. Be sure to scrape up any crispy bits from the bottom of the pan. Repeat this step until the rice reaches your desired level of crispiness.
  • Finish the Dish: During the last 2 minutes of cooking, add the frozen peas and stir them in.
  • Serve: Top with green onions, if desired, and enjoy your delicious homemade fried rice!
