Seasonal eating is such a delight! It often starts with the longing for a fruit or vegetable you can’t wait to enjoy again. Then, when those first juicy berries or sweet ears of corn appear, the excitement is almost electric. A few days later, as you find yourself with a half case ripening at home, it feels like pure bliss. Before you know it, the full harvest arrives, and you’re left wondering how to use up all those delicious extras. That’s when I stumbled upon the idea of boozy fruit!
Ingredients
- 3 lbs plums, pitted and sliced into quarters or sixths
- 2 1/2 cups brandy
- 1 cup sugar
- 2 vanilla beans, halved with seeds scraped out
- 2 cinnamon sticks
Instructions
- Combine all the ingredients in a large mixing bowl.
- Cover the mixture and let it marinate in a dark place for at least 4 weeks.
Notes
Ensure that the fruit remains submerged in the brandy; you may need to weigh it down. Since the alcohol acts as a preservative, any fruit that floats above the surface could spoil or mold. To prevent contamination, use a weight that won’t break down, such as glass or a BPA-free Tattler plastic canning lid. After a couple of weeks, the fruit should have absorbed enough brandy to sink to the bottom, allowing you to remove the weight.
