Here’s how to make naan! This homemade garlic naan is cooked in a hot cast iron skillet, giving it a taste and texture similar to naan made in a traditional tandoor oven.
INGREDIENTS
For the Naan:
- 1½ teaspoons active dry yeast
- 1 teaspoon granulated white sugar
- 1/2 cup warm water (about 110°F)
- 1/2 cup warm whole milk (about 110°F)
- 1/2 cup plain whole milk yogurt
- 3½ cups all-purpose flour
- 1 teaspoon kosher salt
- Olive oil or grapeseed oil, for brushing
- Chopped cilantro, for garnish
For the Garlic Sauce:
- 1 tablespoon minced garlic
- 3 tablespoons melted ghee, melted butter, or olive oil
- Kosher salt, to taste
INSTRUCTIONS
Prepare the Naan:
- In a large bowl, mix the yeast and sugar with the warm water and milk. Let it sit for 5 to 7 minutes, until the yeast becomes foamy and smells slightly like beer.
- Add the yogurt and stir to combine. Then add the flour and salt, mixing until a dough forms. With floured hands, knead the dough until smooth, about 3 to 5 minutes. Place the dough in a large greased bowl, cover with plastic wrap, and let it rest at room temperature for about an hour, or until doubled in size.
- Heat a large cast iron skillet over high heat and lightly coat with oil.
- Divide the dough into 8 equal pieces. Roll each piece to about 1/4-inch thickness. Brush one side of the dough with oil and place it, oil-side down, on the hot skillet. Cook for about 2 minutes, until bubbles appear on the surface. Brush the top with oil, then flip and cook the other side for an additional 2 minutes. Repeat with the remaining dough pieces.
- Brush the cooked naan with garlic sauce and, if desired, sprinkle with chopped cilantro. Serve warm.
Make the Garlic Sauce:
- Combine the minced garlic and ghee in a microwave-safe bowl. Microwave for 20 to 30 seconds until the ghee is melted and the garlic is aromatic. Add salt to taste. Alternatively, melt the butter or heat the oil on the stovetop and stir in the garlic.
Notes:
- The naan should be soft and flexible once cooked. If it’s cooking too quickly or starting to burn, reduce the skillet temperature.
