Ingredients
- 1 cup white sugar
- 1 cup brown sugar
- ⅔ cup water
- ½ teaspoon vanilla extract (or ½ teaspoon maple extract, or 1 teaspoon maple flavoring)

Instructions
- In a saucepan, combine 1 cup white sugar, 1 cup brown sugar, and ⅔ cup water at room temperature. Whisk to combine.
- Cook on medium heat, continuing to whisk, until the mixture begins to boil.
- Reduce the heat to medium-low, keeping the mixture at a gentle simmer. The syrup should reach about 150°F (65°C). Stir in ½ teaspoon vanilla extract.
- Remove from heat and let the syrup cool.
- Once cooled, transfer the syrup to glass jars or airtight containers.
Notes: The syrup will thicken as it cools. Store it in a cool, dark place or refrigerate for longer shelf life.
