INGREDIENTS
- 1 cup Jasmine rice (or long grain rice; use a standard US dry measuring cup)
- 1 cup chicken broth
- 1 cup canned diced tomatoes with sauce (do not drain)
- ¼ cup chopped onion
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon oregano
- ½ teaspoon kosher salt
INSTRUCTIONS
- Rinse the rice in a mesh strainer, shaking off any excess water.
- Add the rice, chicken broth, diced tomatoes with sauce, garlic, onion, butter, and spices to the rice cooker. Stir to combine.
- Set the rice cooker to cook or press start (depending on your cooker). Walk away and let it cook!
- Once it’s done, fluff the rice with a fork and serve.
