HOW TO MAKE EASY RICE COOKER SPANISH RICE

Spanish rice, also known as Mexican rice, is a flavorful tomato-based rice dish infused with garlic, onions, and savory spices. This easy recipe requires minimal effort—simply add all the ingredients to your rice cooker, give it a stir, and press start. In no time, you’ll have a delicious side dish ready to complement your meal. It’s the perfect pairing with ground beef turkey tacos or Instant Pot shredded beef tacos.

INGREDIENTS 

  • 1 cup Jasmine rice (or long grain rice; use a standard US dry measuring cup)
  • 1 cup chicken broth
  • 1 cup canned diced tomatoes with sauce (do not drain)
  • ¼ cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon oregano
  • ½ teaspoon kosher salt

INSTRUCTIONS

  • Rinse the rice in a mesh strainer, shaking off any excess water.
  • Add the rice, chicken broth, diced tomatoes with sauce, garlic, onion, butter, and spices to the rice cooker. Stir to combine.
  • Set the rice cooker to cook or press start (depending on your cooker). Walk away and let it cook!
  • Once it’s done, fluff the rice with a fork and serve.
