INGREDIENTS
- 3 1/2 pounds plums
- 1 1/4 cups sugar
- 3/4 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
INSTRUCTIONS
- Slice the plums in half, remove the pits, and cut them into 1 1/2-inch pieces. No need to peel.
- In a 6-quart nonreactive saucepan, combine the plums, sugar, and 1 cup of water.
- Bring the mixture to a boil, then reduce the heat and simmer until the fruit is very soft, about 20 minutes.
- Remove from heat and puree the fruit and liquid in a food processor until smooth.
- Rinse the saucepan, then return the puree to the pan. Stir in the allspice and cinnamon.
- Cook over low heat, stirring frequently to prevent scorching, until the mixture is thick enough to spread, about 2 1/2 to 3 hours.
- Remove from heat and let cool. Transfer to an airtight container for storage.
Storage Notes: This fruit butter is not canned using a hot water bath, so it must be stored in the refrigerator to remain fresh.
