ONE POT BURRITO BOWLS

If you love one-pot meals as much as I do, then you need to try this One-Pot Burrito Bowl recipe! It’s a delicious, 30-minute meal made in just one pot—now that’s my kind of cooking!

INGREDIENTS

  • 1 tablespoon olive oil
  • 1 pound ground turkey or ground beef
  • ½ green bell pepper, diced
  • ½ sweet onion, diced
  • ½ teaspoon minced garlic
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chiles
  • 2 cups chicken broth
  • 1 cup minute brown rice
  • 1½ tablespoons taco seasoning
  • ½ teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 1 cup shredded cheese

Optional toppings: Tortilla chips, salsa, lettuce, sour cream, guacamole, diced tomatoes, green onions, jalapeños

INSTRUCTIONS

  • Heat olive oil in a large pan over medium heat. Add diced onions, green bell peppers, and garlic, then sauté for 2–3 minutes until the onions start to brown.
  • Add the ground turkey or beef and cook until fully browned. Drain any excess grease.
  • Stir in black beans, corn, diced tomatoes with green chiles, rice, taco seasoning, and red pepper flakes.
  • Pour in the chicken broth and stir well to combine. Bring to a light boil over medium heat.
  • Cover the pan, reduce heat to low, and let simmer for 15–20 minutes, or until the rice is tender. Season with salt and pepper to taste.
  • Remove from heat, sprinkle cheese on top, and cover for another 2–3 minutes to allow the cheese to melt.
  • Serve over lettuce and add your favorite toppings. Enjoy!
