HOW TO MAKE DAIRY-FREE BUTTERCREAM FROSTING

Ingredients

  • 1 stick vegan butter (1 stick = 1/2 cup; we recommend Miyokos, but Earth Balance works too)
  • ½ tsp vanilla extract
  • 2 ½ – 3 cups sifted organic powdered sugar (check for vegan-friendly as needed)
  • 3-4 Tbsp full-fat coconut milk or other dairy-free milk (optional; we prefer coconut)

Instructions

  • In a large mixing bowl, add softened vegan butter and use an electric hand mixer to cream the butter until light and fluffy, about 1 minute. Add vanilla extract and mix again until well combined.
  • Gradually add sifted powdered sugar, ½ cup at a time, continuing to mix until the frosting is smooth and fluffy, scraping down the sides as necessary.
  • If the frosting is too thick, add dairy-free milk, 1 Tbsp at a time, until you reach your desired consistency (optional).
  • Use the frosting immediately, or store it in the fridge for up to 1 week, or freeze for up to 1 month.
