INGREDIENTS
- 500g boneless chicken breast
- ½ tablespoon herb de Provence
- ½ tablespoon smoked paprika
- 6 garlic cloves, chopped
- Salt and pepper, to taste
- 40g unsalted butter (divided into 2 portions)
- 1 tablespoon vegetable oil
INSTRUCTIONS
- Prepare the chicken: Remove any visible fat from the chicken breast, then pat it dry with a kitchen towel or paper. Cut the chicken into bite-sized pieces and transfer to a bowl. If you rinse the chicken, be sure to dry it thoroughly before proceeding.
- Season the chicken with smoked paprika, herb de Provence, salt, and pepper. Mix well to coat the chicken evenly.
- Heat the oil and half of the butter in a skillet over medium-high heat until hot. Add the chicken pieces, being careful not to overcrowd the pan to ensure proper searing. Cook for 2–3 minutes on each side until browned. Stir and cook for another 1–2 minutes to ensure the chicken is fully cooked through. Transfer the chicken to a plate.
- In the same pan, melt the remaining butter over medium heat. Add the garlic and cook for 30 seconds to 1 minute, or until fragrant, keeping a close eye to prevent burning.
- Return the cooked chicken to the skillet, stirring to combine with the garlic butter. Add chopped parsley and give everything a final stir. Remove from heat and serve immediately.
NOTES
- For even cooking, try to cut the chicken into uniform pieces.
- Feel free to customize the seasoning to your taste; options like homemade peri peri seasoning or taco seasoning work great!
- For a hands-off version, place all ingredients in a baking dish and bake in a preheated oven at 200°C (400°F) for 15–20 minutes or until the chicken reaches an internal temperature of 165°F (63°C).
- If using chicken thighs instead of breast, adjust the cooking time as necessary.
Storage:
- In the fridge: Let the chicken cool completely before storing in an airtight container. It will stay fresh for up to 3 days in the fridge and up to 2 months in the freezer.
- To reheat: Microwave until warm or hot.
