FLUFFY OAT FLOUR PANCAKES

These fluffy oat flour pancakes are gluten-free and dairy-free, made with just six simple ingredients. They’re a delicious and healthy twist on traditional pancakes, perfect for any pancake lover.

INGREDIENTS

  • 1 1/2 cups oat flour (150g)
  • 3 teaspoons baking powder
  • 1 cup unsweetened almond milk
  • 1 egg
  • 1/4 cup pure maple syrup
  • 2 teaspoons pure vanilla extract

INSTRUCTIONS

  • In a large bowl, mix together the oat flour and baking powder.
  • In a separate bowl, whisk the egg, maple syrup, almond milk, and vanilla extract until smooth.
  • Add the wet mixture to the dry ingredients and stir until fully combined, either by hand or with an electric mixer.
  • Lightly grease a large pan or griddle with olive or coconut oil and heat to medium-high.
  • Scoop 1/3 cup of batter onto the pan/griddle, cooking until bubbles form on the surface. Flip the pancakes and cook for another 1-2 minutes until lightly browned.
  • Repeat to make 10-12 pancakes.
  • Serve warm with fruit, maple syrup, or your favorite toppings.

Notes: The batter should be thick but still pourable.
