These healthy chocolate chip applesauce cookies are gluten free, dairy free and paleo friendly. They make for a great low sugar dessert or healthy breakfast cookie, as they are only sweetened with applesauce
Ingredients
- ½ cup unsweetened applesauce
- ½ cup unsweetened almond butter
- 1 large egg
- 1 tsp vanilla extract
- 3 Tbsp coconut flour (22g)
- 2 Tbsp ground flax*
- ½ tsp baking soda
- ½ tsp cinnamon (optional)
- ¼ tsp salt
- ¼ cup dark chocolate chips, chopped
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium mixing bowl, combine applesauce, almond butter, egg, and vanilla extract. Whisk until smooth.
- Add the coconut flour, ground flax, cinnamon (if using), baking soda, and salt. Mix until well combined.
- Fold in the chopped chocolate chips.
- Let the batter sit for 5 minutes to thicken.
- Use a large cookie scoop to scoop about 2 tablespoons of dough onto the baking sheet, making 11 cookies.
- Bake for 10-11 minutes at 350°F.
- Remove from the oven, allow the cookies to cool slightly on the baking sheet, then transfer to a wire rack to cool completely.
Notes
*To make ground flax, grind whole flax seeds using a coffee grinder.
