BEEF ENCHILADAS

This simple ground beef enchiladas recipe turns everyday ingredients into a mouthwatering dish packed with flavor. Topped with rich sauce and melty cheese, it’s perfect for quick and satisfying family dinners. Customize with your favorite toppings for the ultimate meal!

INGREDIENTS

BEEF FILLING

  • 1 lb. ground beef
  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (1 oz.) packet taco seasoning
  • 1 tbsp tomato paste
  • 1 (4 oz.) can diced green chiles

ENCHILADAS

  • 1 (15 oz.) can red enchilada sauce
  • 8 corn tortillas
  • 3 cups shredded Mexican cheese blend, divided

TOPPINGS
Sour cream, fresh cilantro, pico de gallo, diced avocado, shredded lettuce, sliced green onions, chopped red onions, cotija cheese, or hot sauce.

INSTRUCTIONS

Prepare the Beef Filling:

  • Cook the ground beef over medium-high heat until browned. Drain excess fat and set the beef aside.
  • In the same pan, sauté the diced onion in a little oil until softened. Stir in the minced garlic and cook for 30 seconds.
  • Return the beef to the pan, then add taco seasoning, tomato paste, green chiles, and water as directed on the taco seasoning packet. Simmer until the liquid reduces. Taste and adjust seasoning with salt and pepper if needed.

Assemble the Enchiladas:

  • Spread 1/2 cup of enchilada sauce evenly across the bottom of a casserole dish.
  • Place about 1/3 cup of the beef mixture along the center of a tortilla, sprinkle with 1/4 cup of shredded cheese, then roll tightly. Lay it seam-side down in the casserole dish. Repeat with the remaining tortillas.

Bake:

  • Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle with the rest of the shredded cheese.
  • Bake uncovered at 350°F on the center rack for 20 minutes, or until the cheese is fully melted.

Serve: Plate the enchiladas while hot and add your favorite toppings. Enjoy!

NOTES

  • Prevent Tearing Tortillas: If tortillas tear while rolling, warm them in a dry pan for 30 seconds per side, or microwave a stack covered with a damp paper towel for 20–30 seconds to make them more pliable.
  • Enhance the Filling: Boost your enchiladas by adding refried beans, black beans, or rice.
  • Switch Up the Sauce: Try green enchilada sauce for a different flavor profile.
  • Add More Flavor: Mix in additional spices like chili powder or swap some ground beef for crumbled chorizo.
