TWICE BAKED BREAKFAST POTATOES

Twice-Baked Breakfast Potatoes are a flavor-packed delight! Hollowed-out baked potatoes are filled with sunny-side-up eggs, crispy bacon, and gooey melted cheese for a breakfast that’s irresistibly delicious.

INGREDIENTS

  • 2 medium russet potatoes, scrubbed and pierced with a fork
  • 2 tablespoons unsalted butter
  • 3 tablespoons heavy cream
  • 4 slices of thick-cut bacon, cooked
  • 4 medium eggs
  • ½ cup shredded cheddar cheese
  • Thinly sliced chives
  • Salt and pepper, to taste

INSTRUCTIONS

  • Preheat and Bake: Preheat the oven to 400°F (200°C). Place the potatoes directly on the middle oven rack and bake for 40–45 minutes, or until tender. Remove and let cool for 15 minutes.
  • Prepare Potatoes: Slice each potato in half lengthwise. Scoop out the flesh into a bowl, leaving a thin shell. Carefully level the bottoms of the potato halves by slicing a thin layer off (without cutting into the hollowed center).
  • Mash Filling: Mash the potato flesh with butter and cream until smooth. Season with salt and pepper, and mix well.
  • Assemble: Spread 1 tablespoon of the mashed potato mixture into each potato skin. Sprinkle with 1 tablespoon of cheese, and lay a slice of bacon in each. Crack a raw egg on top.
  • Bake Again: Place the potatoes on a baking sheet. Lower the oven temperature to 375°F (190°C) and bake for 18–24 minutes, until the egg whites are set but yolks remain runny.
  • Finish and Serve: Sprinkle the remaining cheese over the potatoes, season with salt and pepper, and garnish with sliced chives. Serve warm.

NOTES

  • Prep Ahead: Save time by baking the potatoes, preparing the filling, and cooking the bacon in advance. When ready to serve, rewarm the mashed filling slightly, assemble, and bake.
  • Egg Preferences: If you prefer fully set yolks, bake a few minutes longer. Alternatively, whisk the eggs before adding for a quiche-like texture.
