INGREDIENTS

For the Meatloaf

  • ½ cup plain dried breadcrumbs
  • 2 teaspoons Kosher salt
  • 1 teaspoon black pepper
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup milk
  • 1 large egg, beaten
  • 1 tablespoon Worcestershire sauce
  • 2 pounds 80/20 ground beef
  • 1 small yellow onion, finely minced

For the Topping

  • ⅔ cup good-quality ketchup
  • 2 tablespoons brown sugar
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon Kosher salt
  • ¼ teaspoon each: garlic powder, onion powder, and black pepper

INSTRUCTIONS

  • Preheat the Oven: Preheat your oven to 350°F and line a rimmed baking sheet with foil (nonstick foil is ideal).
  • Prepare the Meatloaf Mixture: In a large bowl, combine breadcrumbs, salt, pepper, garlic powder, and onion powder using a fork. Add milk, beaten egg, and Worcestershire sauce, and mix again.
  • Incorporate the Beef: Add the ground beef and minced onion to the mixture. Use your hands to mix until evenly combined. Shape the mixture into a narrow loaf on the prepared baking sheet, keeping in mind it will spread slightly during baking.
  • Make the Topping: In a small bowl, whisk together ketchup, brown sugar, Worcestershire sauce, salt, garlic powder, onion powder, and black pepper.
  • Bake the Meatloaf: Pour half of the prepared topping over the meatloaf. Bake for 35 minutes, then remove it from the oven and spread the remaining sauce over the top. Return the meatloaf to the oven and bake for another 30-35 minutes.
  • Rest and Serve: Let the meatloaf rest for about 15 minutes before slicing. Serve warm with creamy mashed potatoes and peas for a comforting Southern meal.
