MINI BANANA PANCAKE BITES

These Mini Banana Pancake Bites are a delicious treat, featuring banana slices coated in pancake batter and fried to a golden crisp. Vegan, gluten-free, and perfect for the whole family, these bites are sure to make everyone go bananas!

Ingredients

  • 4 bananas, sliced into ⅓-inch thick medallions
  • 1 cup oat or almond milk
  • 2 tablespoons maple syrup
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 cup all-purpose flour (regular or gluten-free; if using gluten-free, King Arthur Measure for Measure is recommended)
  • 2 tablespoons vegan butter (for frying)

Instructions

  • Start by slicing the bananas into ⅓-inch thick rounds.
  • In a separate bowl, whisk together oat or almond milk, maple syrup, baking powder, vanilla extract, and cinnamon. Add the flour and stir until a smooth pancake batter forms.
  • Heat a skillet over medium heat and add ½ tablespoon of vegan butter. Let it melt and sizzle, then swirl to coat the pan evenly.
  • Use a fork to dip the banana slices into the batter, coating each slice thoroughly. Immediately place the coated banana slices into the hot skillet. Leave about an inch of space between each bite.
  • Fry the pancake bites until golden brown on both sides, then flip them to cook evenly.
  • Once golden on both sides, transfer the bites to a plate (optional: line the plate with paper towels to absorb excess oil).
  • Repeat the process until all the bananas and batter are used up. Serve immediately and enjoy!
