HEALTHY PEANUT BUTTER BANANA MUFFINS

These healthy peanut butter banana recipes require only 10 ingredients and are packed with chocolate chips. They’re also gluten-free and loaded with protein!

INGREDIENTS

  • 3 large ripe bananas
  • 1/2 cup natural peanut butter
  • 4 tablespoons honey
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/4 cups oat flour*
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dark chocolate chips

INSTRUCTIONS

  • Preheat your oven to 425°F. Line a 12-cup muffin tin with paper liners and lightly spray them with oil. Set aside.
  • In a large bowl, mash the bananas and mix with peanut butter, honey, eggs, and vanilla extract until well combined.
  • Stir in the oat flour, baking powder, and salt until just incorporated. Gently fold in the chocolate chips, being careful not to overmix.
  • Scoop the batter into the muffin cups, filling each just under the top.
  • Bake for 5 minutes at 425°F. Without opening the oven door, reduce the temperature to 350°F and continue baking for another 15 minutes.
  • Let the muffins cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

*Note: You can use gluten-free oat flour if needed.
