This Creamy Parmesan Basil Chicken is a simple yet delicious weeknight meal that tastes like it’s straight from a restaurant! This one-pan chicken recipe is packed with flavor and comes together quickly for a fuss-free dinner.
INGREDIENTS
1 lb chicken breast (2 large breasts)
3 tablespoons butter
4 large garlic cloves, minced
1/2 yellow onion, finely minced
3-4 ounces roasted red peppers, thinly sliced
1/4 teaspoon paprika
1 1/2 cups heavy cream
1 cup packed fresh basil leaves (plus extra for garnish)
1 cup freshly grated parmesan
1/4 teaspoon crushed red pepper flakes
1/2 cup white wine or chicken stock
Salt to taste
Black pepper to taste
INSTRUCTIONS
- Slice chicken breasts in half lengthwise and pound them to an even thickness.
- In a large non-stick pan over medium-high heat, melt 2 tablespoons butter. Season the chicken with salt and pepper, then sear for 4-5 minutes on each side until cooked through. Remove from the pan and set aside.
- In the same pan, add 1 tablespoon of butter. Add the onion, garlic, roasted peppers, paprika, crushed red pepper flakes, salt, and pepper. Sauté for about 5 minutes, until the onions and peppers are softened.
- Pour in the white wine or chicken stock to deglaze the pan, and simmer gently until the liquid reduces by half.
- Reduce the heat to medium-low, then add the cream, stirring until a creamy sauce forms. Taste and adjust seasoning with salt and pepper as needed.
- Add the Parmesan and stir until it melts into the sauce. Stir in the basil leaves and simmer for 1-2 minutes until wilted.
- Return the chicken to the pan and let it warm through if necessary. Serve and garnish with additional basil.
NOTES
To pound chicken breasts, I slice them in half lengthwise (like a book), then place them in a zip-top bag. I use a rolling pin to evenly pound them.
This dish is fantastic served with pasta, but for a low-carb option, try it with roasted cauliflower!
