Hamburger Soup is a savory and satisfying dish that combines the comforting flavors of beef with a hearty broth and a variety of vegetables. It’s a classic comfort food that’s perfect for a chilly evening or any time you’re craving a warm and nourishing meal.
INGREDIENTS
- 2 1/2 lb. ground chuck
- 1 large onion, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 14 oz. can whole tomatoes
- 3 cups beef stock or broth, plus extra if needed
- 1 yellow bell pepper, seeded and diced
- 1 red bell pepper, seeded and diced
- 1 green bell pepper, seeded and diced
- 4 carrots, peeled and sliced on the diagonal
- 5 red potatoes, cut into chunks
- 3 tbsp. tomato paste
- 1/2 tsp. kosher salt, more to taste
- 1/2 tsp. black pepper, more to taste
- 2 tsp. dried parsley flakes
- 1/2 tsp. ground oregano
- 1/4 tsp. cayenne pepper, more to taste
DIRECTIONS
- In a large pot, brown the ground chuck with the onion, celery, and garlic over medium-high heat. Once browned, remove from heat and drain excess fat (discard the fat once it cools).
- Return the pot to the heat and add the remaining ingredients: whole tomatoes, beef stock or broth, bell peppers, carrots, red potatoes, tomato paste, salt, pepper, and spices. Stir everything together, then bring to a boil. Lower the heat, cover the pot, and let the soup simmer for 15 to 20 minutes, or until the potatoes are tender but not overly soft.
- Taste and adjust the seasonings as needed, adding more salt if desired. If you’d prefer a thinner consistency, add 1 to 2 cups of broth or hot water and heat through.
