INGREDIENTS
- 12 large eggs
- 1 tablespoon Dijon mustard
- 1 cup cottage cheese
- 6 ounces sharp cheddar, shredded
- 9 ounces deli ham, chopped
- Salt and pepper, to taste
- Italian seasoning (optional)

INSTRUCTIONS
- Preheat the oven to 350°F (175°C) and grease a muffin tin with non-stick spray.
- In a large mixing bowl, whisk together the eggs, Dijon mustard, cottage cheese, chopped ham, salt, and pepper.
- Pour about 1/3 cup of the egg mixture into each muffin cup.
- Sprinkle 2 tablespoons of shredded cheddar on top of each muffin, adding a pinch of Italian seasoning if desired.
