GYOZA SOUP (JAPANESE DUMPLING SOUP)

This 10-minute gyoza soup is the ultimate quick and delicious lunch or dinner. Similar to a Japanese dumpling soup, it’s filled with vegetables for a satisfying and wholesome meal.

INGREDIENTS

  • 5 vegetable gyozas (£3.50 for 20)
  • 2 spring onions, thinly sliced (£0.40)
  • ½ – 1 bulb pak choi, sliced into chunks (£1.00)
  • 20g ginger, finely grated (£0.50)
  • 1 clove garlic, minced (£0.69) (= £0.23)
  • ½ courgette, spiralized (£1.00)

Cupboard Essentials

  • 500 ml vegetable stock
  • 1 tbsp soy sauce
  • 1 tbsp chilli oil
  • Salt & pepper

METHOD

  • Heat the chilli oil in a medium-sized saucepan over low heat. Add half of the thinly sliced spring onions (the white part) and season with salt. Fry for a couple of minutes.
  • Add the garlic and ginger, frying for another minute before adding all of the ingredients: gyozas, pak choi, courgette, vegetable stock, and soy sauce.
  • Stir to combine, then cover with a lid. Let the soup simmer for about 7 minutes.
  • Serve with a sprinkle of spring onion and chili flakes for added flavor. Enjoy!

NOTES

  • To increase calories/portion size, add ramen or rice noodles to the broth for extra carbohydrates.
  • For more protein, add thinly sliced chicken or pork to poach in the broth.
  • For a vegetarian option, add tofu blocks to cook in the broth, or crispy tofu for a vegan alternative.
  • You can also add extra vegetables like sweetcorn, mange tout, green beans, mushrooms, spring greens, and cabbage to boost the soup’s flavor and nutritional value.
