INGREDIENTS
- 3 medium-sized sweet potatoes, peeled and cut into 1-inch wedges
- 2 tablespoons extra virgin olive oil
- 1 ½ teaspoons sea salt
- ¾ cup Greek yogurt
- 4 green onions, trimmed and roughly chopped
- ¼ cup fresh dill, plus extra for garnish
- 2 garlic cloves, smashed
- 10 large fresh basil leaves
- 2 tablespoons fresh lemon juice
METHOD
- Preheat the grill to medium-high heat.
- Brush the sweet potato wedges with olive oil and sprinkle with 1 teaspoon of salt.
- Place the sweet potatoes on the grill, cut side down. Grill, turning occasionally, until fork-tender, about 15 minutes. Transfer to a serving platter.
- While the sweet potatoes are grilling, prepare the yogurt dressing. In a blender or food processor, combine the Greek yogurt, green onions, dill, garlic, basil, lemon juice, and the remaining ½ teaspoon of salt. Blend until smooth, about 1–3 minutes.
- Drizzle the grilled sweet potatoes with the yogurt dressing. Garnish with fresh dill and serve family style.
