GRILLED SWEET POTATOES

Drizzled with olive oil and seasoned with salt, this simple grilled sweet potato recipe is the effortless side dish you’ve been missing.

INGREDIENTS

  • 3 medium-sized sweet potatoes, peeled and cut into 1-inch wedges
  • 2 tablespoons extra virgin olive oil
  • 1 ½ teaspoons sea salt
  • ¾ cup Greek yogurt
  • 4 green onions, trimmed and roughly chopped
  • ¼ cup fresh dill, plus extra for garnish
  • 2 garlic cloves, smashed
  • 10 large fresh basil leaves
  • 2 tablespoons fresh lemon juice

METHOD

  • Preheat the grill to medium-high heat.
  • Brush the sweet potato wedges with olive oil and sprinkle with 1 teaspoon of salt.
  • Place the sweet potatoes on the grill, cut side down. Grill, turning occasionally, until fork-tender, about 15 minutes. Transfer to a serving platter.
  • While the sweet potatoes are grilling, prepare the yogurt dressing. In a blender or food processor, combine the Greek yogurt, green onions, dill, garlic, basil, lemon juice, and the remaining ½ teaspoon of salt. Blend until smooth, about 1–3 minutes.
  • Drizzle the grilled sweet potatoes with the yogurt dressing. Garnish with fresh dill and serve family style.
