GREEK BRUSCHETTA

This Greek Bruschetta is a delightful fusion of Greek salad and classic bruschetta! It’s the perfect appetizer to serve at your next gathering.

INGREDIENTS

  • 1 baguette
  • 10 cherry tomatoes
  • 1-2 Persian or Lebanese cucumbers
  • 150g olive spread
  • 100g feta cheese
  • ¼ red onion
  • Drizzle of olive oil
  • 1 garlic clove

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon white vinegar
  • Juice of ½ lemon
  • 1 teaspoon dried oregano
  • Pinch of salt

INSTRUCTIONS

  • Prepare the Vegetables:
    • Slice the cherry tomatoes in half.
    • Thinly slice the red onion.
    • Use a peeler to create cucumber ribbons.
  • Make the Dressing:
    • Combine all dressing ingredients in a small bowl or ramekin.
    • Whisk well to blend.
  • Toast the Baguette:
    • Slice the baguette diagonally into about 20 pieces.
    • Place the slices on a baking sheet and lightly drizzle with olive oil.
    • Toast in a preheated oven at 180°C (350°F) for 3-4 minutes or until golden.
    • Remove from the oven and rub each slice with the garlic clove for added flavor.
  • Assemble the Bruschetta:
    • Spread a layer of olive spread on each toasted baguette slice.
    • Top with a rolled cucumber ribbon, half a cherry tomato, and a few slices of red onion.
    • Crumble feta cheese over the top.
    • Drizzle with the prepared dressing.
