INGREDIENTS
For The Chicken:
- 1 Whole Chicken
- 2 Lemons
- 1 Tablespoon Olive Oil
- 3 Garlic Cloves (minced)
- 1 Teaspoon Soy Sauce
- 1 Tablespoon Ground Cumin
- 1 Tablespoon Paprika
- ½ Tablespoon Freshly Ground Black Pepper
- ½ Tablespoon Dried Oregano
- 1½ Tablespoon Kosher Salt
For The Green Sauce:
- ⅓ Cup Mayonnaise
- ½ Cup Yogurt
- 1 Tablespoon Extra-Virgin Olive Oil
- 1 Cup Cilantro Leaves with Tender Stems
- 1 Jalapeno (chopped)
- 1 Garlic Clove (minced)
- 2½ Tablespoons Fresh Lime Juice
- ¼ Teaspoon Kosher Salt

INSTRUCTIONS
- In a bowl, combine olive oil, garlic, oregano, cumin powder, smoked paprika, black pepper, soy sauce, kosher salt, and lemon juice to create the marinade for the chicken.
- Whisk the ingredients together until evenly mixed.
- Pound the chicken and coat it well with the marinade. Let it marinate for 1 hour and 30 minutes.
- While the chicken marinates, prepare the green sauce: blend together mayonnaise, yogurt, garlic, jalapeño, lime juice, and salt in a blender.
- Add freshly chopped cilantro to the blender and blend everything into a smooth, fine paste.
- Once the chicken has marinated, grease a baking tray with olive oil and place the chicken pieces on it, leaving space between them.
- Preheat the oven to 400°F (200°C). Bake the chicken for 25-30 minutes until fully cooked.
- Serve the Peruvian Chicken with the homemade green sauce and enjoy the burst of flavors!
