Nothing beats golden, gluten-free Yorkshire puddings—no proper roast dinner is complete without them! This simple recipe requires just four ingredients and delivers the lightest, fluffiest, most incredible Yorkshire puds ever.
INGREDIENTS (MAKES 12)
- 75g plain gluten-free flour
- 75g cornflour
- 120ml milk
- 3 large eggs
- Pinch of salt
- 12 tsp vegetable oil

INSTRUCTIONS
- Preheat the oven to 220°C / 200°C Fan / Gas Mark 8. Add 1 teaspoon of vegetable oil to each hole of a 12-hole muffin tin and place it in the oven for 10 minutes until the oil is hot.
- Prepare the batter while the oil heats. In a large jug, whisk together the flour, cornflour, milk, eggs, and salt until smooth.
- Carefully remove the muffin tin from the oven. Working quickly, pour the batter evenly into the 12 holes—each should be about half full. The oil should sizzle when the batter is added.
- Immediately return the tin to the oven and bake for 18-20 minutes until the puddings are golden brown and puffed up.
- Serve straight away for the best texture!
