INGREDIENTS
- 6 garlic cloves, minced
- ¼ cup low-sodium soy sauce or tamari
- 2 tablespoons light brown sugar
- 1 tablespoon toasted sesame oil
- 1 tablespoon chili sauce (e.g., sambal oelek)
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 red bell pepper, thinly sliced
- ½ pound asparagus, trimmed and cut into 2-inch pieces
- 1 cup snow peas
- 2 pounds large raw tail-on shrimp, peeled and deveined

METHOD
- In a small bowl, whisk together the garlic, ¼ cup water, soy sauce, brown sugar, sesame oil, chili sauce, and cornstarch until smooth.
- Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot and shimmering, add the bell pepper, asparagus, and snow peas. Stir occasionally and cook until the vegetables start to soften, about 3-4 minutes.
- Add the shrimp to the skillet and cook, stirring occasionally, until the shrimp turn pink and opaque, about 3-4 minutes.
- Pour the prepared sauce into the skillet and stir occasionally until the sauce thickens and coats the shrimp, about 5 minutes.
- Serve the stir-fry over cooked rice and garnish with chopped cilantro and sesame seeds, if desired.
