Ingredients
- 2 cups (452 g) unsalted butter, softened
- 1 ½ cups (180 g) confectioners’ sugar
- 1 cup (84 g) cocoa powder
- ¾ cup (226 g) light corn syrup
- 2 teaspoons vanilla extract
- ⅛ teaspoon salt
- 12 ounces (340 g) semisweet chocolate, melted and slightly cooled
Instructions
- In the bowl of a stand mixer with the paddle attachment or using a handheld electric mixer, beat the softened butter on medium-high speed until creamy and pale, about 5 minutes.
- Add the cocoa powder and 1 cup of confectioners’ sugar. Beat on low speed until most of the sugar is moistened, then increase to medium speed and beat until fully combined.
- Add the remaining confectioners’ sugar and beat on medium-low speed until incorporated.
- Mix in the corn syrup, vanilla extract, and salt. Continue beating until fully combined.
- Add the melted and slightly cooled chocolate and beat until the frosting is smooth and creamy.
Notes
- You can use semisweet, dark, milk, or white chocolate for this frosting. Be sure to use chopped baking bars instead of chocolate chips.
- Ensure the melted chocolate is cool to the touch before adding it to the frosting. Warm chocolate can cause the buttercream to curdle or become too loose.
