Ermine Frosting, also referred to as milk frosting, flour buttercream, flour frosting, or $300 Dollar Frosting, is a silky smooth frosting made from a cooked mixture of milk and flour, sugar, and butter. Without eggs, this frosting offers a lighter alternative to traditional buttercream. While it’s most commonly used to frost red velvet cake, its airy texture makes it a perfect topping for a variety of cakes and cupcakes.
Ingredients
1 cup (245 g) whole milk
5 tablespoons all-purpose flour
1 cup (2 sticks / 227 g) unsalted butter, room temperature
1 cup (200 g) granulated sugar
1 teaspoon vanilla extract
Instructions
Step 1: In a medium saucepan over medium heat, whisk together the milk and flour. Cook, whisking constantly for 3-5 minutes, until the mixture thickens and becomes smooth, resembling thick pudding. It should coat the back of a spoon. Remove from heat and allow to cool to room temperature.
Step 2: In the bowl of a stand mixer, cream the butter and sugar together on medium speed until light and fluffy, about 2-3 minutes. Stop the mixer and scrape down the sides of the bowl with a rubber spatula.
Step 3: Add the cooled milk mixture to the bowl and beat on medium-high speed for 2-3 minutes, until the frosting is light and fluffy, pausing to scrape the sides of the bowl as needed.
Step 4: Switch to the whisk attachment, add the vanilla, and mix on high for 7-8 minutes, or until the frosting is smooth and creamy.
