Ingredients
- 1 cup cornmeal
- 1 ¼ cups flour
- ¼ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ¼ cups rice milk or soy milk
- ½ cup olive oil or vegetable oil
- 2 tablespoons white vinegar
- 1 tablespoon corn syrup
Directions
- Preheat your oven to 375°F. Grease an 8″ or 9″ square baking pan.
- In a mixing bowl, combine the dry ingredients: cornmeal, flour, sugar, baking powder, baking soda, and salt.
- Stir in the wet ingredients: rice milk (or soy milk), oil, vinegar, and corn syrup. Mix until fully combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for about 20 minutes, or until the sides start to pull away from the edges of the pan and a wooden toothpick inserted into the center comes out clean.
