It’s the perfect last-minute meal for busy families who want to eat well, save money, and still have time to spare.
INGREDIENTS
- 1 can (14.75 oz) of salmon
- 1 large egg
- 2 tablespoons freshly chopped parsley (or 1 teaspoon dried parsley)
- 2 tablespoons sour cream
- 1 teaspoon lemon juice
- 1 teaspoon Dijon mustard
- Dash of hot sauce (optional)
- ½ cup panko breadcrumbs
- ½ teaspoon salt
- ¼ teaspoon onion powder
- ¼ teaspoon dried dill weed
- ¼ teaspoon ground black pepper
- ¼ teaspoon paprika
- Avocado oil cooking spray (or any neutral cooking spray)
INSTRUCTIONS
- Open the can of salmon and drain the liquid into a small bowl, reserving it for later. If your salmon mixture feels too dry, you can use some of this liquid to moisten it.
- Transfer the drained salmon to a medium-sized bowl. Use a fork to mash the salmon into flakes and break down any small bones (you can remove them if preferred).
- Crack the egg into the bowl with the salmon, then add the sour cream, Dijon mustard, lemon juice, and hot sauce (if using). Stir everything together with a fork or a rubber spatula.
- Add the panko breadcrumbs and remaining seasonings (salt, onion powder, dill, black pepper, and paprika) to the bowl. Mix everything together with a spatula. Test the mixture by forming a patty with your hands. If it’s too dry to hold together, gradually add some of the reserved salmon liquid until the mixture holds its shape.
- Use a large cookie scoop to portion out the salmon mixture and form small, flat patties. Place them on a lined baking sheet or plate.
- Lightly spray each side of the patties with cooking spray.
- Preheat your Air Fryer to 390°F for at least 3 minutes, following your manufacturer’s instructions.
- Once preheated, remove the basket from the Air Fryer and place it on a trivet or hot pad. Arrange the patties in the basket, working in batches if necessary.
- Cook for 8-10 minutes, flipping the patties halfway through for even browning.
