Ingredients
- ¾ cup flour
- 1 tablespoon sugar
- 1 tablespoon cornmeal
- 2 teaspoons baking powder
- 2 teaspoons salt
- ¾ cup milk
- 2 ½ cups chopped onions (about 2 small onions)
- Shortening or oil for frying
Instructions
- In a large bowl, combine all the dry ingredients. Add the milk and stir until you have a thick batter.
- Mix in the chopped onions until they are evenly distributed throughout the batter.
- Heat ½ inch of oil in a skillet over medium-high heat. Drop spoonfuls of the batter into the hot oil.
- Use the back of a spatula to flatten each patty, then cook until both sides are golden brown and crispy.
- Remove from the oil and drain on paper towels. Sprinkle with salt to taste.

Take these onion patties to the next level by adding ¼ cup of crumbled, cooked bacon to the batter before frying. Other great additions include ¼ cup of chopped green pepper, cooked mushrooms, or a sprinkle of cheddar cheese on top after cooking. So irresistible!
