These fluffy oat flour pancakes are gluten-free and dairy-free, made with just six simple ingredients. They’re a delicious and healthy twist on traditional pancakes, perfect for any pancake lover.
INGREDIENTS
- 1 1/2 cups oat flour (150g)
- 3 teaspoons baking powder
- 1 cup unsweetened almond milk
- 1 egg
- 1/4 cup pure maple syrup
- 2 teaspoons pure vanilla extract
INSTRUCTIONS
- In a large bowl, mix together the oat flour and baking powder.
- In a separate bowl, whisk the egg, maple syrup, almond milk, and vanilla extract until smooth.
- Add the wet mixture to the dry ingredients and stir until fully combined, either by hand or with an electric mixer.
- Lightly grease a large pan or griddle with olive or coconut oil and heat to medium-high.
- Scoop 1/3 cup of batter onto the pan/griddle, cooking until bubbles form on the surface. Flip the pancakes and cook for another 1-2 minutes until lightly browned.
- Repeat to make 10-12 pancakes.
- Serve warm with fruit, maple syrup, or your favorite toppings.
