FLUFFY ALMOND MILK BISCUITS

Fluffy, soft, and buttery, these easy homemade almond milk biscuits are a healthier take on classic buttermilk biscuits! Made with just 8 simple ingredients, they’re ready in under 25 minutes and make the perfect addition to breakfast, brunch, or dinner.

INGREDIENTS

  • 2 cups all-purpose flour, spooned and leveled
  • 2 tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • 7 Tbsp unsalted butter, chilled and cut into ¼-inch cubes
  • ¾ cup cold unsweetened almond milk
  • 1 Tbsp fresh lemon juice
  • 1 tsp pure maple syrup

INSTRUCTIONS

  • Preheat the Oven: Set your oven to 450°F and line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Incorporate Butter: Add the cold, cubed butter to the dry ingredients. Using two knives, a pastry cutter, or a food processor, cut the butter into the flour until it resembles a coarse meal with small clumps.
  • Prepare Wet Ingredients: In a measuring cup or small bowl, mix the almond milk, lemon juice, and maple syrup.
  • Combine Wet and Dry: Pour the wet mixture into the flour mixture. Gently stir with a wooden spoon or spatula until the dough just comes together. It should be sticky and slightly crumbly with visible butter pieces. Avoid overmixing—some dry flour bits are fine.
  • Shape the Dough: Transfer the dough to a lightly floured surface. Using floured hands, pat it gently into a 1-inch-thick slab.
  • Cut Biscuits: Use a 2 ¼-inch biscuit cutter to press straight down into the dough without twisting, ensuring proper rise. Continue cutting until all the dough is used, yielding 10–12 biscuits.
  • Prepare for Baking: Arrange the biscuits on the lined baking sheet. Brush the tops with melted butter or almond milk for a golden finish.
  • Bake: Bake for 10–12 minutes, or until the tops are lightly golden.
  • Serve: Enjoy warm with butter, jam, or honey!

STORAGE TIPS

  • Room Temperature: Store in an airtight container for up to 5 days.
