These five-ingredient tahini cookies are one of my favorites! They’re crunchy, naturally sweet, and honestly, it’s hard to resist them once they’re out of the oven. Not only do they taste amazing, but they’re also grain-free and free from refined sugar. Unlike most cookies, which tend to be low in nutrients and high in empty calories, these are packed with goodness. Made primarily from seeds and nuts and sweetened with maple syrup, they provide a good dose of fiber, protein, healthy monounsaturated fats, antioxidants, and essential vitamins and minerals in every bite.
INGREDIENTS
- 1 ½ cups almond flour
- ½ cup tahini
- ½ cup maple syrup or honey
- 1 tsp baking powder
- ¼ cup sesame seeds
INSTRUCTIONS
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the almond flour, tahini, maple syrup (or honey), and baking powder. Stir well until fully mixed.
- Shape the dough into 20 small balls. Flatten each one into a disc using the palms of your hands.
- Coat with sesame seeds – Pour the sesame seeds onto a plate and dip one side of each cookie into them.
- Bake – Arrange the cookies on the lined baking sheet and bake for 10-12 minutes, or until golden brown.
- Cool down – Let the cookies rest on the baking sheet for about 5 minutes before transferring them to a cooling rack. They will be soft at first but will firm up as they cool.
NOTES
- The consistency of the dough may vary depending on the tahini brand. If it’s too runny, add more almond flour. If it’s too dry, mix in a little more tahini.
- Baking times may vary based on oven type and cookie size. Keep an eye on them, as nuts can burn quickly.
