This is my most-loved cookie recipe—my original no-butter chocolate chip cookies! Using oil instead of butter, these butterless cookies are always a hit, coming out perfectly chewy and sweet every time.
INGREDIENTS
- 2 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup vegetable oil
- 1 1/4 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp almond extract
- 2 cups semisweet chocolate chips
INSTRUCTIONS
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
- In the bowl of a stand mixer, combine the vegetable oil, brown sugar, and white sugar. Mix with the paddle attachment until smooth and well combined.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla and almond extract.
- Gradually add the dry ingredients to the wet mixture and mix until just combined. Gently fold in the chocolate chips.
- Using a cookie dough scoop, portion the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for 8-9 minutes, or until the edges are golden. Allow the cookies to cool on the pan for a few minutes before transferring them to a wire rack.
