HONEY SOY CHICKEN AND RICE

Honey soy chicken and rice makes for a delicious and easy weeknight family dinner. Tender chicken coated in a sweet and sticky sauce with hints of garlic and ginger is paired with rice and broccoli, creating a satisfying one-bowl meal.

EQUIPMENT

INGREDIENTS

  • 1 tablespoon brown sugar
  • 2 tablespoons honey
  • ¼ cup soy sauce
  • 2 teaspoons chopped fresh ginger
  • 2 teaspoons chopped garlic
  • 2 tablespoons hot sauce (see notes)
  • Salt & pepper, to taste
  • 4 boneless, skinless chicken breasts, cut into ½-inch strips
  • 1 tablespoon vegetable oil

For serving

  • Cooked rice
  • Sesame seeds
  • Sliced green onions
  • ½ pound cooked broccoli florets (optional)

INSTRUCTIONS

  • In a small bowl, combine the brown sugar, honey, soy sauce, ginger, garlic, and hot sauce.
  • Season the chicken strips with salt and pepper.
  • Heat the oil in a large skillet over medium heat. Add the chicken strips and cook until browned on both sides, about 1 minute per side.
  • Pour the sauce over the chicken and stir to coat. Simmer uncovered for 8 to 10 minutes, or until the sauce thickens.
  • If using, toss the chicken with the cooked broccoli or serve the broccoli on the side.
  • Serve the chicken over rice, garnished with sesame seeds and sliced green onions.
