INGREDIENTS
- 1/3 cup cocoa powder
- 1 to 1 1/2 cups plain, vanilla, or honey yogurt (regular or Greek)
- 1/3 cup heavy whipping cream
- 1/2 cup honey
INSTRUCTIONS
- Blend – Using a stand mixer or handheld beaters, whip the heavy cream until soft peaks form. The cream should hold its shape but not be too stiff.
- Combine – In a medium mixing bowl, stir together the yogurt, cocoa powder, honey, and whipped cream until smooth. If desired, you can also add vanilla and espresso powder. Be careful not to overmix.
- Pour – Spoon the chocolate mixture into your popsicle molds, gently tapping the molds on the counter to eliminate any air pockets. Leave about 1/2 inch of space at the top of each mold to allow for expansion as the popsicles freeze.
- Add Sticks – Insert popsicle sticks into the molds, ensuring about 1.5 inches of the stick remains above the top of the mold.
- Freeze – Place the molds in the freezer and let the popsicles harden for at least 4 hours. For best results, freeze for 8 hours.
Notes
- Serving – When ready to eat, remove the popsicles from the molds. If needed, run warm water over the outside of the molds for about 15 seconds to loosen them, then gently slide the popsicles out.
- Storage – Keep the popsicles in the freezer inside the molds for up to 2 weeks.
