INGREDIENTS
- 15oz/400g refrigerated cheese tortellini
- 1 tbsp olive oil
- 1/3 cup milk
- 2/3 cup sour cream
- 1/2 cup grated mozzarella
- 1 1/2 cups fresh baby spinach
- 1 small tomato, chopped
- 1 garlic clove, minced
- 2 scallions, chopped
- 2 tbsp chopped parsley or basil
- Parmesan cheese (for topping)
- Freshly ground black pepper
- Salt to taste
INSTRUCTIONS
- Cook the tortellini according to the package instructions, or for a one-pan method: heat 1 tbsp olive oil in a large, deep pan over medium-high heat. Add the tortellini and sauté for 30 seconds to a minute until lightly golden brown.
- Lower the heat and pour in the milk, stirring to combine. Let it cook for another minute.
- Stir in the sour cream, then reduce the heat slightly. Cook for 2-3 minutes, until the sauce thickens.
- Add the garlic, scallions, tomato, spinach, and parsley, and season with freshly ground black pepper.
- Sprinkle in the grated mozzarella, allowing the sauce to thicken further. Stir everything well and taste. Adjust with more salt and pepper as needed—don’t be afraid to add a generous amount of pepper!
- Remove from heat, serve immediately, and top with Parmesan cheese for an extra burst of flavor. Enjoy!
