FETTUCCINE ALFREDO WITH SHRIMP

There’s nothing quite like fettuccine noodles coated in a creamy homemade Alfredo sauce and paired with succulent shrimp! INGREDIENTS

  • 8 ounces dry fettuccine pasta (about 4 cups)
  • 650 grams raw shrimp (approximately 2 cups of medium shrimp, or adjust to your preference)
  • 1 tablespoon butter

For Kittencal’s Alfredo Sauce:

  • 1/2 cup butter, cubed
  • 1 garlic clove, minced (add more if you’re a garlic lover)
  • 3 teaspoons all-purpose flour
  • 1/8 teaspoon black pepper (plus more for seasoning at the end)
  • Pinch of cayenne pepper
  • 2 cups heavy whipping cream (33-35%), or for a thinner sauce, use 1 1/2 cups heavy cream and 1/2 cup light cream
  • 3/4 cup grated Parmesan cheese (add more if desired)
  • Salt or seasoned salt, to taste
  • 1/2 cup shredded mozzarella cheese (lightly packed, or you can use a shredded Kraft 4-Cheese Italiano blend)

STEP-BY-STEP METHOD

  • Begin by cooking the fettuccine pasta to your preferred doneness.
  • In a non-stick pan or skillet, melt 1 tablespoon of butter.
  • Once the butter is melted and nearly browned, add the shrimp to the pan.
  • Cook the shrimp until done, then set aside.
  • Add the remaining butter into the pan for the sauce.
  • Sauté the minced garlic for about 2 minutes, making sure not to burn it.
  • Stir in the flour, pepper, and cayenne pepper. Cook for about a minute.
  • Pour in the heavy cream, reduce the heat, and simmer for about 2 minutes, or until the sauce thickens.
  • Mix in the cheeses and stir until melted and smooth.
  • Toss the cooked fettuccine and shrimp into the sauce, coating everything well.
  • Serve with optional garlic bread on the side, and garnish with your favorite herb like parsley or basil.
