VANILLA RASPBERRY CHIA PUDDING

You’re going to love this rich and creamy Vanilla Raspberry Chia Pudding! Simply blend the ingredients before bed, let it set overnight, and wake up to a deliciously healthy breakfast that feels like a treat!

INGREDIENTS

  • 1 cup fresh or frozen raspberries
  • 1 cup milk (cow’s milk, almond, coconut, or your favorite)
  • 1 tbsp honey, rice malt syrup, or pure maple syrup
  • 1 tsp pure vanilla extract
  • Juice of 1 lemon
  • 2 tbsp Greek yogurt (optional)
  • 3 tbsp chia seeds

INSTRUCTIONS

  • In a blender or food processor, blend all ingredients except the chia seeds until smooth. Taste and adjust sweetness if needed.
  • Pour the mixture into two jars and add 1.5 tablespoons of chia seeds to each.
  • Secure the lids and shake well to evenly distribute the chia seeds.
  • Let sit for 1 hour, shake again, then refrigerate overnight.
