Introducing my favorite One-Bowl Chocolate Zucchini Bread! This simple recipe makes two wonderfully moist, chocolatey loaves packed with freshly shredded zucchini, warm cinnamon, a hint of nutmeg, and plenty of semi-sweet chocolate chips. Perfect for sharing—enjoy one loaf yourself and gift the other to a friend, coworker, or neighbor. This easy, delicious treat is sure to become a staple!
INGREDIENTS
- 2 cups granulated sugar (or pure cane organic sugar)
- 3 large eggs, room temperature
- 1 cup vegetable oil
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 cups grated zucchini (do not drain the liquid; about 3 medium zucchinis)
- 12 oz semi-sweet chocolate chips (divided: 8 oz/227g for the batter, 4 oz/113g for topping)
INSTRUCTIONS
- Position an oven rack on the second level and preheat the oven to 350ºF.
- Generously grease two loaf pans with flour-based baking spray or grease with shortening and dust with flour. Optionally, line with a parchment paper sling for easy removal. Set aside.
- In a large mixing bowl, whisk together the sugar, eggs, oil, and vanilla extract until smooth.
- Add the flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg, and mix until fully combined.
- Fold in the grated zucchini and 8 ounces of chocolate chips until evenly incorporated.
- Divide the batter evenly between the prepared loaf pans. Sprinkle the remaining 4 ounces of chocolate chips on top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaves cool in the pans for 5-10 minutes before transferring them to a cooling rack to cool completely.
RECIPE NOTES
- For mini loaves, divide the batter into 8 mini loaf tins. Keep the oven temperature at 350ºF but reduce the baking time to 35-40 minutes. Placing the mini tins on a baking sheet will make it easier to move them in and out of the oven.
