INGREDIENTS
- 1 can (14.75 oz) salmon
- 2 eggs
- 1/3 cup cornmeal
- 1 tbsp all-purpose flour
- 1 small onion, finely chopped (or onion powder, to taste)
- Salt, to taste
- Pepper, to taste
- Oil, for frying
INSTRUCTIONS
Step 1
Drain the canned salmon and transfer it to a bowl, removing any visible bones. In a separate large mixing bowl, add the deboned salmon, then crack in two eggs. Add the finely chopped onion (or onion powder), cornmeal, flour, salt, and pepper. Gradually add the cornmeal, a little at a time, until you reach your desired consistency. Mix everything together until well combined.
Step 2
Set a pan over medium-high heat and add enough oil to coat the bottom. Once the oil is hot, reduce the heat to medium. Scoop a small portion of the salmon mixture, roll it into a ball, then flatten it to your desired thickness. Place the patties in the pan and fry each side until golden brown, about 5 to 10 minutes per side.
